Hot summer days call for our newly released 2021 Sauvignon Blanc!
Sauv is often paired with a brie or gouda but I absolutely love it with asiago –Susanne, Owner & Winemaker
These hot weather grapes taste of fresh guava and passionfruit highlighting the true characteristics of Sauvignon Blanc. Pair this crisp summer wine with the mild licorice flavor of fennel topped with asiago for the perfect summer treat.
Roasted Fennel with Asiago
Ingredients:
4 large fennel bulbs
1/2 cup good olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons freshly grated asiago cheese
chopped fennel fronds
Directions
Preheat oven 425°F
Remove the stems of the fennel and slice the bulb in half lengthwise, cutting right through the core. Slice the bulb vertically into 1/2 inch thick slices (do not got any smaller). Feel free to chop the fennel fronds and put to the side.
Spread the fennel slices on a baking sheet, coat with olive oil, salt, and pepper and toss all together.
Roast the fennel slices for 45 minutes, turning them once half way through. When the edges are crisp and brown, remove from oven and sprinkle with asiago cheese and fennel fronds. Roast a remaining 5 more minutes.
Pour a glass of wine (or two) and enjoy!
